Tasting Note
Mineral-driven Chablis with bright citrus, green apple and white-peach fruit, oyster-shell salinity and a hint of white pepper. Elegant, precise, concentrated mid-palate with a long, stony finish.
Food Pairing
Western: oysters, scallops, grilled white fish, roast chicken with lemon-butter sauce, creamy seafood pasta. Asian: sushi/sashimi, tempura prawns, steamed fish with ginger and scallions, Cantonese steamed bass, light noodle or dumpling dishes.
Production Method
Pneumatic pressing, cold static settling; native-yeast fermentation in temperature-controlled stainless steel; 10–12 months ageing (1/3 stainless, 1/3 80hL oak vats, 1/3 French oak barrels) with light lees contact.
