Tasting Note
Crisp, flinty Chablis: lemon, green apple, white peach, sea-spray salinity, wet stone and subtle white flowers; medium-plus body with focused acidity and a long, mineral finish.

Western: oysters, lobster, grilled/poached fish in butter or cream sauces, roast chicken, soft cheeses, fine charcuterie. Asian: sashimi/nigiri, tempura prawns, steamed white fish with ginger and scallion, light Thai or Vietnamese seafood dishes.
Production Method
Hand-harvested; pneumatic pressing and cold static settling; spontaneous fermentation in temperature-controlled stainless steel; malolactic occurs; aged 10–12 months (≈1/3 steel, 1/3 80hl oak vats, 1/3 Burgundian barrels). Organic-certified from 2018.
