Tasting Note
Powerful red and black berries, sweet dark cherry and plum, mixed spice, cola/chinotto, licorice, chocolate and espresso; concentrated with dense tannins, vibrant acidity and a long chocolatey, mineral finish.

Food Pairing
Grilled ribeye, roast lamb, venison, duck and aged cheeses; Asian pairings: Korean BBQ (bulgogi), char siu, Sichuan beef, beef rendang, hoisin-glazed duck.

Production Method
Fully destemmed, fermented with natural yeasts, 5–6 weeks skin maceration, gentle pressing and ~12 months maturation in French oak (c.20% new); organically farmed, dry-grown vines.
