Tasting Note
Fresh, refined Chardonnay: citrus (lemon, grapefruit), white peach and orchard fruit, delicate white flowers, saline minerality, creamy mid-palate with subtle toast/butter from oak, lively acidity and a long, intense finish.
Food Pairing
Western: sole with beurre blanc, grilled/poached fish, roasted chicken, creamy risotto, chèvre and soft cheeses. Asian: sashimi/sushi, tempura, steamed fish with ginger & scallion, mild Thai coconut fish curry, Chinese-style steamed sea bass.
Production Method
Hand-worked, low yields; fermented in stainless steel and in oak for some cuvées, with partial oak ageing (c.20% new) and élevage on fine lees (c.10 months) for texture.

Small family domaine based in Vergisson with roughly 12 ha; produces Saint-Véran, Pouilly-Fuissé and Mâcon sites; emphasis on low yields, terroir expression and organic/eco practices (conversion from 2020).
