Tasting Note

Citrus and green apple with white flowers, saline minerality, subtle lees and vanilla spice; medium-bodied, brisk acidity and a long, precise, chalky finish.

Production Method

Whole-cluster pressing; fermentation and aging in French oak barrels (~12 months, ~15–20% new), then ~6 months in stainless steel; light filtration; bottled after ~18 months.
