Tasting Note
Rich, powerful Grand Cru Chardonnay—white flowers, pear, honey and toasted almond with pronounced limestone minerality, creamy texture and toasted-oak spice. Very long, saline, citrus-tinged finish.

Western: lobster, turbot, roast chicken, veal sweetbreads with morels, aged Comté; Asian: sashimi/sushi, miso‑glazed sea bass, tempura prawns, Cantonese steamed fish.
Production Method
Hand-harvested; pneumatic press; slow barrel fermentation and élevage on fine lees for ~18 months (≈20% new French oak), then 6 months in stainless steel; light fining and filtration before bottling.
Vineyard Info
Carillon family viticulturists in Puligny since the 16th century. Jacques Carillon created his domaine in 2010, managing ~5.5 ha with sustainable practices and very small Grand Cru parcels.
