Tasting Note
Bright red cherry and wild strawberry with violet perfume, subtle spice and meaty undertones; silky, fine tannins, lively acidity and a mineral-tinged, elegant finish.

Food Pairing
Western: roast duck, coq au vin, mushroom risotto, veal cutlets, soft cheeses (Brie, Reblochon). Asian: Peking duck, char siu pork, teriyaki beef, miso-glazed eggplant, shiitake mushroom dishes.

Production Method
Hand-harvested with strict sorting; 100% destemmed. Cold pre-fermentation (6–8 days), 18–21 day maceration with selected yeasts; 100% malolactic; ~13 months in French oak barrels (≈30% new).
