Tasting Note

Pear, white flowers, hazelnut and citrus with subtle spice and toasted oak; silky, saline minerality, medium–full body and a long, focused finish.

Western: butter-poached lobster, roast chicken, seared scallops, creamy mushroom risotto, soft cheeses. Asian: miso-glazed cod, sushi/sashimi, steamed fish with ginger & scallions, Thai/Chinese seafood dishes with light coconut or soy-based sauces.


Production Method

Hand-harvested Chardonnay from multiple Puligny parcels; fermented in French oak barrels, partial malolactic fermentation, ~11 months élevage with lees contact (c.30% new oak historically).

Domaine Jean-Marc (J.M.) Boillot, founded 1985, from the Boillot/Sauzet family; farms Puligny parcels including Les Enseignères, Rue Rousseau and Les Meix (c.1.8 ha blended for the village cuvée).
