Tasting Note

Concentrated white Burgundy: orchard and stone fruit, apricot, citrus oil, honeyed florals, toasted hazelnut and butter, with saline minerality and racy acidity. Broad, satiny texture and a long, precise finish.


Food Pairing

Western: lobster thermidor, seared scallops, roast veal with cream sauce, mushroom risotto (truffle). Asian: miso‑glazed black cod, lobster tempura, sushi (fatty tuna), Cantonese roast duck with plum sauce.


Production Method

Hand‑harvested, gentle pneumatic pressing, fermentation and malolactic in French oak barrels; élevage on fine lees ~11 months with around 15–30% new oak (estate practice).
