Tasting Note
Intense citrus and lime leaf with lemongrass, white florals and chalky mineral drive. Bone-dry, racy acidity, green apple and white pepper, with a concentrated mid‑palate and very long, stony finish.

Food Pairing
Western: grilled lemon prawns, roast chicken with herbs, goat cheese, seafood linguine. Asian: Thai green curry, chilli crab, sashimi/sushi, Vietnamese herbs and lime; pairs well with spicy and citrus-forward dishes.

Production Method
Hand-harvested biodynamic fruit; gentle pressing with free-run juice selected, cool stainless‑steel fermentation, extended lees contact, unfined and vegan friendly.

Springvale Vineyard (5.3 ha) at Watervale, purchased 2000 and planted 2001; A‑Grade certified organic & biodynamic, low-yielding, high-altitude site on red loam over limestone with slate subsoil.
