Tasting Note
Concentrated lime, lemon blossom and green apple with talc-like chalky minerality, lemongrass and white florals. Very dry, high-acidity, steely mid-palate and a long saline, citrus-rind finish.

Food Pairing
Western: oysters, ceviche, grilled white fish, roast chicken, goat cheese. Asian: sushi and sashimi, Thai green curry, Vietnamese spring rolls, spicy Sichuan dishes, steamed fish with ginger and scallions.

Production Method
Certified organic and biodynamic; hand-harvested, cool stainless-steel fermentations with minimal intervention, no fining and measured sulphur additions; bottled under screwcap.

Springvale vineyard (Watervale subregion) on red loam over limestone and slate, around 460m elevation. Producer Jeffrey Grosset (est. 1981) is renowned for Clare Valley Rieslings.
