Tasting Note
Intense lemon, lime and green-apple aromas with white florals, talc and wet-slate minerality. Bone-dry, taut and racy with chalky texture, mouth‑watering acidity and a long, zesty citrus finish.

Food Pairing
Western: oysters, ceviche, grilled white fish with lemon, roast chicken with herbs, goat cheese. Asian: sushi/sashimi, Thai green curry, spicy Malaysian or Szechuan dishes, steamed fish with ginger and scallions, Vietnamese salads.

Production Method
Estate-grown, A‑Grade certified organic and biodynamic. Hand-harvested fruit; minimal intervention winemaking (no oak, no malolactic fermentation), cool ferment and limited lees contact to preserve purity and aromatics.

Springvale is a high-altitude, 5.3‑hectare site at Watervale (planted c.2000) — thin red loam over limestone with vines rooted into slate bedrock; close-planted, low-yielding vines producing concentrated fruit.
