Tasting Note
Zesty lime and lemon pith with lemongrass and subtle floral notes, chalky/mineral core, very high acidity, crisp dry palate and a long, mouth-puckering finish.

Oysters, scallops, ceviche, grilled prawns, lemon-roast chicken, goat cheese; Asian: sushi/sashimi, Thai green curry, Vietnamese spring rolls, Szechuan seafood.

Production Method
Estate-grown, A-grade organic and biodynamic; hand-harvested, whole-bunch pressing, only free-run juice used. Parcels fermented separately in inert vessels (stainless/concrete), minimal intervention, no oak, bottled under screwcap.
