Tasting Note
Bright lime, lemon and green-apple fruit with honeysuckle and wet-stone minerality. Ultra-dry, piercing acidity, focused mid-palate and a long, slatey finish.

Western: fresh oysters, ceviche, grilled white fish, goat cheese, roast chicken. Asian: sushi/sashimi, Vietnamese spring rolls, Thai green curry, lightly spiced Sichuan prawns, grilled prawns with lime.

Estate-grown, hand-harvested fruit from single-vineyard clones; cold-settled juice fermented in stainless steel with neutral yeasts. A‑Grade certified organic and biodynamic farming; bottled under screwcap.
