Tasting Note
Bright lime and lemon zest with green apple, jasmine and talc-like chalk; piercing slate minerality, saline drive and crystalline acidity leading to an intense, bone-dry, very long finish.

West: oysters, sashimi, kingfish ceviche, roast chicken with lemon, goat cheese, ceviche. Asia: Japanese sashimi/sushi, Vietnamese fresh spring rolls, Thai green curry (milder), Sichuan-style steamed fish, tempura.
Production Method
Biodynamically farmed, hand-harvested, tiny yields; primarily first free-run juice, cool fermentation with minimal intervention. Unfined, vegan-friendly and bottled under screwcap.

Planted by Jeffrey Grosset (mid-1990s) on ancient blue-slate soils at Polish Hill; low‑yielding, high‑elevation site producing concentrated, terroir-driven riesling. Grosset is ACO-certified organic and biodynamic.
