Tasting Note

Bright lime and lemon zest with white flowers, beeswax, wet stone and green apple; chalky texture, racy acidity and intense, laser-focused fruit that finishes very long and precise.

Western: oysters, seared scallops, grilled trout, lemon-herb chicken, goat cheese. Asian: sushi/sashimi, spicy Thai curries, Vietnamese seafood, Sichuan-style prawns, chilli crab.

Hand-harvested fruit from A-Grade certified organic & biodynamic vines; whole-bunch pressing, cool stainless-steel fermentation, unfined, minimal SO2; bottled under screwcap.
