Tasting Note

Concentrated lime, finger-lime and grapefruit, chalky/talc minerality with floral notes; razor-sharp acidity, savory slate character and an intensely long, pithy citrus finish.

Production Method

Hand-harvested; ACO organic/biodynamic; pneumatic pressing with free-run juice only; cool fermentation, ~2 months on lees, minimal intervention; filtered, not fined.
