Tasting Note

Crystalline lime and lemon zest with green apple, jasmine blossom and pronounced slate/chalk minerality; piercing, mouthwatering acidity, tight mineral texture and a very long, dry finish.

Oysters, ceviche, grilled prawns, roast chicken with lemon, goat cheese, sushi/sashimi, Vietnamese spring rolls, Thai green papaya salad, spicy Szechuan prawns.


Production Method

Hand-harvested, made from free‑run juice, cold-settled and fermented with a neutral cultured yeast in stainless steel; bottled under screwcap.
