Tasting Note
Piercing lime, lemon and green apple with floral honeysuckle, wet pebble/slate minerality, ultra-dry, searing acidity and tightly coiled citrus intensity; very long, linear finish.

Western: natural oysters, poached white fish, ceviche, goat cheese. Asian: sashimi/sushi, Chinese steamed fish, Vietnamese grilled prawns, mildly spicy Thai or Malaysian prawn curry.

Production Method
Hand-harvested, whole-bunch destemmed, gentle pneumatic pressing; only free-run juice cold-settled and fermented in temperature-controlled stainless steel with neutral yeasts; short lees contact, no oak.
