Tasting Note
Voluminous aromatics of lime, lemongrass and white florals. Concentrated lemon-drop and grapefruit pith with hints of ginger, coriander and crushed oyster shell; creamy lees texture, laser-like acidity and a very long, mineral-driven finish.

Food Pairing
Western: oysters, ceviche, grilled prawns, lemon-roast chicken, fresh goat cheese. Asian: sashimi/sushi, Thai green curry, Vietnamese spring rolls, spicy Sichuan dishes, ginger-soy seafood.

Production Method
Single-clone (110) fruit from biodynamic Rockwood Vineyard; organic/biodynamic viticulture. Gentle pressing, cool fermentation and extended lees ageing (≈9 months) before bottling under screwcap; unfined/vegan-friendly.
