Tasting Note
Perfumed red cherry and raspberry with rose petal, lavender, underbrush and mocha. Fine-grained tannins, saline minerality and subtle spice yield an elegant, medium-bodied palate and a refined, persistent finish.

Food Pairing
Roast duck, coq au vin, lamb with herbs, mushroom risotto; Asian: Peking duck, miso-glazed aubergine, soy/ginger beef or mushroom stir-fries, char siu pork.

Production Method
100% de-stemmed; ambient-yeast fermentation (15–20 days) in open wooden vats; aged ~18 months in oak (≈15% new); racked twice, finished in stainless steel, bottled June–July; minimal SO2 additions.
