Tasting Note
Dry, medium-bodied Tokubetsu Honjozo with pear and green-apple ginjo aromas, steamed-rice and light toasted-nut flavors, gentle umami/saline minerality and a clean, food-friendly finish.

Production Method
Brewed from 100% Yamada Nishiki (Tojo), polished ~55–60%. Made as a Honjozo with a small addition of distilled brewer's alcohol, slow low-temperature fermentation using Oigawa spring water, then chilled and pasteurized before bottling.
