Tasting Note

Clean, dry and medium-bodied: steamed rice, green apple, melon and light muscat, with nutty/roasted notes, gentle umami and a crisp, slightly warming finish.

Production Method

Tokubetsu Honjozo: small addition of distilled alcohol after pressing; rice polished to ~55% (koji) / 60% (moromi); long koji cultivation and cool fermentation using soft Oigawa River water.
