Tasting Note

Crisp, refined Junmai Daiginjo with white peach, Asian pear, melon and subtle tropical notes, a clean saline minerality, tight body and a dry, pleasantly bitter finish.

Sashimi, sushi, oysters, ceviche, white fish carpaccio, tempura, grilled scallops, light chicken or seafood pasta, Asian dishes like yakitori, sashimi salads, and steamed fish with ginger.


Production Method

Junmai Daiginjo brewed from Tojo Akitsu Tsuneda Yamada Nishiki rice polished to ~40%, using Isojiman proprietary yeast, low-temperature fermentation, extended koji development and careful pressing.

Isojiman Shuzo (Yaizu, Shizuoka), established 1830. Renowned for premium Yamada Nishiki sourcing and a ‘terroir’ blue-bottle series (Furuke/Tsuneda/Saito). Known for fruity ginjo character and seafood-friendly, saline finishes.
