Tasting Note
Crisp, refined Junmai Daiginjo with white peach, Asian pear, melon and subtle tropical notes, a clean saline minerality, tight body and a dry, pleasantly bitter finish.

Production Method
Junmai Daiginjo brewed from Tojo Akitsu Tsuneda Yamada Nishiki rice polished to ~40%, using Isojiman proprietary yeast, low-temperature fermentation, extended koji development and careful pressing.

Isojiman Shuzo (Yaizu, Shizuoka), established 1830. Renowned for premium Yamada Nishiki sourcing and a ‘terroir’ blue-bottle series (Furuke/Tsuneda/Saito). Known for fruity ginjo character and seafood-friendly, saline finishes.
