Tasting Note

Silky, herb-tinged tropical fruits (mango/guava) with bright floral top notes and a distinct saline, sea-spray finish; very clean and refined with a long, mineral-tinged aftertaste.

Raw and grilled shellfish (oysters, scallops), sashimi, sushi, crab, light ceviche, grilled white fish, shellfish pasta, tempura, Asian steamed fish with soy/ginger.


Production Method

Junmai Daiginjo made from AAA Yamada Nishiki polished to 33%; koji cultivated ~70 hours; proprietary house yeast propagated on local seaweed; traditional fune wooden pressing; only the nakadori (middle press) used.
