Tasting Note

Delicate ginjo aroma of green apple, pear and melon; gently sweet on the palate with a clean, crisp, slightly acidic finish and a long, balanced aftertaste.

Production Method

Junmai Daiginjo made from 100% Tojo Akitsu Furuke Yamada Nishiki polished to 40%. Low-temperature ginjo fermentation using Isojiman yeast; pressed and bottled as junmai (no added alcohol).
