Tasting Note

Pronounced ginjo aromas of melon, peach, kiwi and white flowers. Silky, slightly dry palate with balanced acidity, gentle bitterness and light umami, finishing clean with medium length and mineral-tinged clarity.

Sushi, sashimi, tempura, grilled white fish (nodoguro/kinki), yakitori; oysters, ceviche, shellfish, light cream pasta, roasted chicken, citrus salads.


Production Method

Junmai Daiginjo brewed from 100% Yamada Nishiki (≈50% polish). Slow, low-temperature fermentation using Isojiman house yeast and alpine spring water; chilled before release.
