Tasting Note

Light, clean mouthfeel with restrained floral-fruity aromas (white peach, melon). Modest acidity, subtle rice sweetness and an elegant, long, clear finish—very food-friendly and refined.

Production Method

Daiginjo brewing: Yamada Nishiki rice polished to ~50%, low-temperature slow fermentation; made with rice, rice koji and added distilled alcohol; gently pressed and cooled for clarity.
