Tasting Note

Elegant daiginjo aromatics of melon, white-peach and pear; silky, medium-bodied palate with a clean mineral/saline thread, balanced acidity and a dry, lingering umami finish.

Production Method

Daiginjo brewing using 100% Yamada Nishiki polished to ~45%; slow, low-temperature fermentation with in‑house yeast and traditional press; bottled chilled to preserve aromatics.
