Tasting Note

Fresh, bright junmai with clear melon and apple aromatics, steamed rice and subtle vanilla. Crisp, dry palate with light umami and a clean, short finish.


Food Pairing

Sashimi and sushi, tempura, grilled chicken (yakitori), stewed pork, pork belly, roasted white fish, creamy seafood pasta, grilled vegetables, mild cheeses, Chinese-style stir-fry pork.


Production Method

Junmai brewed from Matsuyama Mitsui rice milled to ~60%. Made as a first-press (hatsu-shibori) with low-temperature fermentation to preserve fresh ginjo-like aromas.

Ishizuchi Shuzo, a family-run brewery founded 1920 in Saijo at the foot of Mt. Ishizuchi; known for soft water and a focus on junmai and junmai-ginjo styles.
