Tasting Note
Fresh, bright junmai with clear melon and apple aromatics, steamed rice and subtle vanilla. Crisp, dry palate with light umami and a clean, short finish.

Production Method
Junmai brewed from Matsuyama Mitsui rice milled to ~60%. Made as a first-press (hatsu-shibori) with low-temperature fermentation to preserve fresh ginjo-like aromas.
