Bright ruby; concentrated dark-plum, black cherry, cocoa, leather, tobacco and Mediterranean herb notes. Savory, spicy core with ripe fruit and long, polished finish.

Roasted lamb, short-rib pappardelle, aged Tuscan pecorino, grilled steak; Asian: Korean BBQ, char siu, braised Sichuan beef, teriyaki beef and rich noodle dishes.

Production Method
Organic/biodynamic practices; fermented separately, aged ~18 months in French oak (mix of 20hl barrels and barriques; ~50% new for Cabernet/Syrah).
