Tasting Note
Opulent, velvety red with ripe raspberry, kirsch and black cherry, floral and wild herb notes, vanilla, cocoa and sweet tobacco; long spicy, velvety finish.

Food Pairing
Western: Florentine steak, braised beef, wild boar ragu, roasted lamb, aged Pecorino or Parmigiano. Asian: Korean BBQ (bulgogi), Cantonese char siu, Sichuan beef, teriyaki beef, rich Japanese nikujaga.

Production Method
Hand-harvested; fermented in stainless steel with ~22 days maceration, malolactic fermentation, then aged ~18 months in French oak barriques and further bottle aging. Organic viticulture.

Il Borro estate (owned by Ferruccio Ferragamo) in Valdarno; historic manor restored into an organic-focused winery. Flagship wine produced since 1999 combining Bordeaux varieties.
