Tasting Note
Vivid ruby red with aromas of red/black cherries, floral notes and spicy pepper. Velvety mid-weight palate, fresh acidity, moderate tannins and a savory, medium-long spicy finish.

Western: grilled/roasted lamb, bistecca alla fiorentina, beef ragù, aged pecorino and cured meats. Asian: spicy Indian curries (vindaloo), Thai stir-fries, Sichuan beef, Korean BBQ, teriyaki beef.

Production Method
Hand-harvested; separate cold maceration and stainless-steel fermentation per variety; extended skin maceration; aged ~12 months in used French oak barriques, finished in steel and bottle-aged.
