Tasting Note
Onion-skin pink with fine, persistent perlage. Notes of bread crust, citrus peel, strawberry, pomegranate and mandarin; creamy, fresh palate with bright acidity, mineral undertones and a lively, clean finish.

Western: oysters, smoked salmon, ceviche, light pasta, risotto, fresh cheeses, prosciutto; Asian: sushi/sashimi, tempura, Vietnamese spring rolls, Thai spicy fish salads, light Chinese dim sum.

Production Method
Vinified in white from early-harvest Sangiovese (pressing off the skins), secondary fermentation in bottle (Metodo Classico) with extended lees aging; produced under organic viticulture.

Vineyard Info
Il Borro estate, purchased by Ferruccio Ferragamo in 1993 and managed by the Ferragamo family; vines replanted from 1995 and converted to organic certification in 2015.
