Tasting Note
Concentrated dark-plum and blackberry core with violet perfume, cracked black pepper, eucalyptus/mint hints and toasted vanilla oak; medium-full, fresh acidity and fine-grained, drying tannins, long spiced finish.

Western: grilled ribeye, roast lamb, braised short ribs, mushroom risotto, aged cheddar. Asian: Korean BBQ (bulgogi), Sichuan pepper beef, Peking duck, Malaysian beef rendang, char siu pork.

Production Method
Hand-harvested, batch-sorted fruit; open-top and stainless fermenters with punchdowns/pumpovers, malolactic conversion, matured ~18 months in French oak barriques (approx. 60% new). Minimal fining/filtration.
