Tasting Note

Concentrated dark-plum and blackberry fruit with lifted violet perfume, black pepper, cocoa and cedar; fine-grained chalky tannins, medium–full body and controlled French oak, finishing long and savoury.

Roast lamb, grilled rib‑eye, beef short ribs, aged cheddar; Asian: Peking duck, char siu, Korean BBQ (bulgogi), spicy Sichuan beef or teriyaki-glazed dishes.


Production Method

Hand-picked fruit; small-batch fermentations in open and closed stainless tanks with punchdowns/pump-overs, malolactic fermentation, then pressed to French oak barriques and matured for ~18 months.
