Tasting Note
Blackcurrant, blackberry and plum with violet/anise spice, vanilla, dark chocolate and black‑olive notes. Silky fruit texture, vibrant acidity and fine‑grained oak tannins lead to a plush, long finish.

Food Pairing
Western: grilled ribeye, slow‑braised lamb shank, roast beef, aged cheddar. Asian: hoisin duck, char siu pork, Korean BBQ short ribs, spicy Sichuan beef, black pepper tofu.

Production Method
Parcels fermented separately (Cabernet in closed/static stainless fermenters; Shiraz open‑top with daily plunging). Matured ~18 months in French oak, then ~2 months élevage in American oak after blending.
