Tasting Note
Citrus and white stone fruits—grapefruit, white peach—complexed by brioche, nougat and wet stone. Chalky, saline acidity with integrated French oak, nutty cashew notes and a long, precise finish.
Food Pairing
Western: roast chicken, butter-poached lobster, creamy pasta, pork belly, seared scallops. Asian: miso-glazed cod, soy-grilled kingfish, prawn tempura, chicken katsu, richer sushi (white fish).
Production Method
Whole-bunch pressing; fermentation in French oak barriques (natural/ambient yeast); partial malolactic fermentation; ~9 months on lees with 30–40% new French oak and light bâtonnage; bottled under screwcap.
Vineyard Info
