Tasting Note
Pale straw; white peach, nectarine and citrus with toasted nougat, brioche and wet-stone minerality. Creamy mid-palate, bright acidity and saline lift, finishing long and focused.

Western: roast chicken, butter-poached lobster, creamy pasta (fettuccine Alfredo), pork with apple sauce. Asian: dashi broth with kombu/shiitake, miso-glazed cod, tempura vegetables with tentsuyu, soy-butter scallops.
Production Method
Hand-picked, whole-bunch pressed. Parcels fermented in French oak barriques and puncheons (approx. 25-30% new), indigenous yeast fermentation, lees ageing 9-10 months; limited malolactic on some parcels.
