Tasting Note
Perfumed cabernet of violet, cassis, blackberry and mulberry with cedar, graphite and savoury herbs. Firm, chalky tannins, bright acidity and cocoa‑spice oak lead to a concentrated, long finish.

Western: roast beef, slow‑cooked ribs, lamb, beef brisket, aged cheddar. Asian: Korean BBQ (bulgogi), char siu, Cantonese roast duck, Sichuan beef, beef rendang, hearty Japanese miso‑braised dishes.
Production Method
Hand-harvested fruit; destemmed and fermented in closed stainless and small open vats. Selected parcels had extended skin contact; malolactic fermentation; matured in French oak barriques (c.25–30% new) for ~12–22 months; light egg‑white fining and bottling.
