Tasting Note

Concentrated cassis, blueberry and cedar with tobacco, graphite and balsamic savoury notes. Sinewy, fine tannins, firm acidity and medium‑full body delivering a long, poised finish.

Grilled ribeye, roast lamb, beef stew; aged cheeses (cheddar, manchego); Asian: Korean BBQ short ribs (galbi), Sichuan braised beef, Cantonese roast duck, char siu.


Production Method

Hand‑harvested, destemmed and small‑batch fermentations (static and open vats); basket‑pressed and matured in French oak barriques (~18–22 months; significant new oak influence). Light fining/filtration before bottling.
