Tasting Note

Bright yellow; aromas of almond, quince and citrus with toasted hazelnut. Dense, generous palate with ripe orchard fruit, saline minerality, subtle oak and buttery texture, finishing long and mineral.


Food Pairing

Western: grilled seafood, seared scallops, truffle or mushroom risotto, roast chicken with cream sauce, Brie or Comté. Asian: sushi (fatty fish), tempura, steamed lobster, mushroom stir-fry, Cantonese steamed white-fish.


Production Method

Hand-harvested Chardonnay fermented and aged in oak barrels with full malolactic; typical élevage 14–16 months in selected barrels from Hospices cooperage.

Cuvée Jehan Humblot from Les Porusots (Premier Cru). Parcel mid-slope, east-facing; vines pre-1975. Produced by the Domaine des Hospices de Beaune; historically donated to the Hospices in 1600.
