Tasting Note
Delicate, perfumed Pinot—red cherry, hibiscus, rose water, orange peel and rhubarb with wet-stone/mineral undernotes. Light-bodied, energetic acidity, finely textured tannins and a very long, saline-tinged finish.
Food Pairing
Western: roast duck, chicken with mushrooms, pork tenderloin, mushroom risotto, grilled salmon. Asian: miso-glazed black cod, seared tuna with soy-citrus, Peking duck, shiitake gyoza, mildly spiced Korean BBQ pork.
Production Method
Estate-grown fruit, low yields from heavy clay and leaf-roll–affected vines. Hand-harvested, small-lot fermentations (native yeasts); 2020 used no whole-cluster. Aged in French oak barrels (selection of ages) to preserve perfume and transparency.
Vineyard Info
