Tasting Note
Ethereal, high-toned Pinot with bright red cherry, strawberry, rose petal and orange zest, layered with forest-floor and coastal conifer minerality. Silky texture, soft tannins, vibrant acidity and a persistent, perfumed finish; delicate yet age-worthy.
Food Pairing
Western: seared wild salmon, roast duck breast with cherry sauce, mushroom risotto, coq au vin. Asian: miso-glazed black cod, soy-ginger salmon, duck pancakes (Peking-style), mushroom soba, grilled shiitake yakitori.
Production Method
Estate-grown; biodynamic farming. Hand-harvested, small-lot fermentations (largely indigenous yeasts), limited whole-cluster inclusion, aged in French oak with a low percentage new oak; minimal intervention.
