Tasting Note

Fresh red cherries, crushed strawberries, ripe peach, wet stone, anise and mint; juicy, concentrated palate of dark plum skin, dried goji berry and a hint of baking chocolate; long, persistent finish.


Food Pairing

Western: roast duck, mushroom risotto, pan-seared salmon, pork tenderloin, mushroom and herb focaccia. Asian: miso-glazed black cod, char siu pork, Peking duck, shiitake ramen, teriyaki chicken.


Production Method

Estate fruit vinified block-by-block, blended from ~34 parcels; biodynamic farming; aged in French oak (~34% new). Cellar 1+ years recommended.
