Tasting Note
Perfumed red cherries and strawberries with brambly edges, forest-floor and sappy herb notes, subtle spice and mineral lift; supple, fine-grained tannins and bright acidity give a lively, medium-bodied, ageworthy profile.
Food Pairing
Roasted duck; grilled or miso-glazed salmon; mushroom risotto; pork belly or char siu; ramen with pork broth; Korean BBQ (bulgogi); soft-rind cheeses; grilled shiitake and soy-glazed vegetables.
Production Method
Estate fruit from ~28 blocks; each block fermented separately in open-top fermenters with indigenous yeasts, minimal intervention and gentle handling; wines rest in barrel until bottling (history of French oak use).
Vineyard Info
Founded by David Hirsch; 72-acre True Sonoma Coast site divided into dozens of farming blocks adjacent to the San Andreas Fault. San Andreas Fault is the estate flagship, blending many parcels to represent the vineyard.
