Tasting Note

Bright red cherry and brambly berry fruit with rose-petal perfume, forest-floor and mineral notes. Juicy, supple and energetic with grainy tannins and a long, nuanced finish.

Food Pairing

Roasted duck, mushroom risotto, grilled salmon, pork tenderloin; Asian: Peking duck, miso-glazed black cod, char siu, mushroom-based ramen or soba.

Production Method

100% estate fruit from ~28 blocks; biodynamic farming. Small‑lot fermentations, matured in French oak (estimate ~17 months, ~30% new) to preserve terroir and structure.
