Tasting Note
High-toned red fruits—strawberry, sour cherry and plum skin—followed by orange peel, sage, anise and forest floor. Delicate yet persistent fruit with long, elegant tannins and saline minerality; benefits from decanting or cellaring.
Food Pairing
Western: roast duck, mushroom risotto, roasted pork loin, beef bourguignon. Asian: miso-glazed black cod, teriyaki salmon, char siu pork, shiitake soba or yakitori.
Production Method
Estate-grown single-vineyard fruit; fermentations by individual blocks, selecting best barrels for Reserve; aged in French oak (typical Hirsch practice ~15–20 months; minority portion new oak). Limited production, cellaring advised.
Vineyard Info
Hirsch Vineyards (David Hirsch) is a single-vineyard site above the fog line on the extreme western Sonoma Coast adjacent to the San Andreas Fault; ~72 acres, many old blocks, biodynamic conversion and small-lot farming. Ross Cobb has overseen winemaking in modern era.
