Tasting Note

Earthy, dark red fruit (black cherry, blackberry) with savory/forest‑floor notes, spice and floral lift. Silky texture, fine grain tannins and bright acidity with a long, mineral‑tinged finish.

Western: roast duck, mushroom risotto, pork tenderloin, aged cheeses. Asian: miso‑glazed salmon, Peking duck, char siu pork, mushroom soba.


Production Method

Biodynamically farmed estate fruit; hand‑harvested, fermented (largely native yeasts) and barrel‑selected; aged in French (and occasional Austrian) oak with a portion new for roughly two years.
