Tasting Note

Cool red fruit of rhubarb, cranberry and sour cherry with graphite, anise, orange peel and winter-forest notes. Dense fruit, muscular mountain tannins, buoyant acidity and energetic minerality; powerful yet elegant with a long, savory finish.

Roast duck with cherry sauce, mushroom risotto, grilled or miso-glazed salmon, pork tenderloin with herbs; Asian pairings: Peking duck, Korean bulgogi, teriyaki salmon, umami-rich dishes with shiitake or miso.


Production Method

Estate fruit; biodynamic farming. Fermented as Pinot Noir and aged in French oak (approx. 16 months, ~30–33% new) to build structure while preserving site freshness.
